In its classic version, She Crab Soup in the Myrtle Beach area is a rich cream-based traditional dish studded with lump crab meat and containing crab roe (that’s where the “she” part comes from), mace, dry sherry and another splash of sherry on top to finish it.
She Crab Soup should be slightly pink in color with a thickness to the soup that is velvet-smooth. Of course Grand Strand chefs add their variations, such as nutmeg in addition to or instead of mace, finely diced vegetables, special garnishes or minced hard-boiled egg instead of roe.
If there are floury lumps or it has a sludgy texture, the chef should have started over.
